The oldest thing in the atelier is a jar of white miso started in 2021, before the tiles were laid. It sits at the back of the shelf and gets moved only when something spoils behind it.
Fermentation is not a trend here. It is how the kitchen buys time. Tomatoes in August become a paste that brightens a plate in February. Chillies become a paste that outlives them. Yoghurt becomes the thing that cuts through a heavy sauce in winter.
The rule is simple. If a jar needs an explanation, it stays in the kitchen. If a guest asks what it is, it goes on the plate. That is the whole test.
